BACON AND CABBAGE

Today is my last day in Ireland. It has been lovely to live here for a while. I like learning their history, their sayings, I love to chat with them, laugh, have chocolate after dinner, drink some tea and some guinness (for me a glass, please! I cannot finish a pint!). I had great time here, as everytime I come!

You will need plenty of time to cook it but you'll enjoy the most eating it!

1000 gr collar of bacon and 1 medium-sized cabbage.

Soak the bacon overnight in cold water. 
After that, remove and place in a pot. Then cover with fresh water and bring to the boil.
Remove the scum, cover and simmer for about 1 hour and a half (approximately: 30 minutes per 450 gr + 1 lb).
Cut the cabbage into quarters and add to the pot. 
Cook slowly for about 20 minutes. 
Finally, drain well and serve with boiled potatoes.

I discovered gravy sauce, you can mix it with the potatoes or over the bacon, it's so tasty! 

Bacon has saturated fat more than monounsaturated or polyunsaturated fat. As you know, it is the fat that increases LDL cholesterol  in our bodies, as a consequence it can narrow our arteries. So don't abuse, don't eat too much (that means it's not necessary that you eat everyday :) twice a week it's enough if you have healthy habits).

It is also rich in sodium so be careful if you have blood pressure problems! I'll try to write a post about it.

Cabbage, as a vegetable, is rich in vitamins and minerals generally.  And potatoes are rich in carbohydrate. Carbohydrates are good to give you energy for a long time, good energy source.
